The first is a light frothy surprise served in a Martini glass with a few diced mangoes and passion fruit seeds at the bottom. The second is a creamy coconutty crime parfait! Both topped with a sweet and tangy mango-lime coulis.
Another winter warmer. This soup is bulked out with split red lentils - a much healthier choice. The lemon livens it up and brings you a hint of summer warmth.
A little twist on the good old lemon drizzle cake. I prefer mine with lime; it has a sharper acidic kick and cuts through the sugar in the cake nicely.
This oh-so-moist cake is spiced with the Tonka bean; an oval and rather elegantly shaped black bean (see picture here, plus another recipe laced with the spice). Some say it is a nice substitute for vanilla, but don't be fooled. Many other spicy notes float within this genie of a bean.
So stay in and make cranberry chutney to slather on slices of fresh bread. Eat with cheese or cold leftover meat for supper. Be lazy. And moreishly so...
