Moreish Double Chocolate and Banana Muffins

These muffins are melt-in-the-mouth moist with mashed banana,  cocoa powder and 70% cocoa chocolate chips to boot. Very moreish indeed. Dieters look away now!

Makes 9 Muffins

Dried ingredients:
150g Plain Flour
3 tbsp cocoa powder
Pinch of salt
1/2 tsp of baking powder & 1/2 tsp f baking soda
40g of 70% Cocoa chocolate chips (I used Lindt)


Wet Ingredients:
50g butter
70g Buttermilk
1 egg
2 tbsp of caster sugar
1 ripe banana mashed

Method

Preheat the oven at 190ºC and line a muffin tray with paper cups.

Mix the dry ingredients in a bowl. To prepare the wet ingredients, melt the butter and add the sugar, beating well. Then add the mashed banana, egg and buttermilk and continue mixing. Combine the dry ingredients with the wet ingredients. Don't over-mix the batter. Fill the paper cups two-thirds and bake for 20 minutes or until a toothpick comes out clean. Place muffins on a cooling rack for ten minutes. Done!
