Easy Buttery Lime Loaf Cake

Here's an easy and versatile loaf cake. Ready within less than an hour; great with your coffee or a scoop of ice cream, even a drizzle of raspberry coulis for dessert. A simple cake for the fussiest of eaters among us.

Ingredients:

150g unsalted butter
100g plain flour
50g ground almonds
100g sugar
1 heaped tsp baking powder
3 eggs
Lime juice and Zest

Method

Grease and line a loaf tin with baking paper. Preheat the oven at 180°.

Bring the butter to room temperaure and cream with the sugar. Beat in the egg yolks with a little flour to prevent curdling. Sift the flour and baking powder in another bowl, then add in the ground almonds to this and mix. Pour the dry mix into the wet mix and combine both. Add the lime juice and zest. Next whisk the egg whites until stiff. Fold it into the batter. Pour batter into the loaf tin. Bake for 40 minutes or until a toothpick inserted into the cake comes out clean.
